It seems that, since our gums shrink the longer we wear dentures, adjustments could be made to the dentures to help eleviate this problem. Can't the teeth be made a little longer/bigger to make up for the shrinking? Cant' the dentures themselves be made a litttle thicker - or something - to help?

There are a number of things that can be done to compensate for gum and bone loss once dentures are placed. It is important to continue to get regular dental evaluations even though your natural teeth are gone. The changes we denture wearers undergo once our teeth are gone are fairly subtle and take place over time- we do not notice it on a daily basis but your dentist can take measurements and prescribe relines or even new dentures if the changes are significant.
